Mit einer Anbaufläche von mehr als 14.000 Hektar, was fast 12% der Anbaufläche Argentiniens ausmacht, ist Cabernet Sauvignon, nach Malbec und Bonarda, mittlerweile die dritthäufigste Rebsorte für den Rotweinausbau in Argentinien. 
Cabernet Sauvignon, der auch als „König der Rotweine“ bezeichnet wird, gehört zusammen mit dem Malbec zu den Sorten, die in den letzten Jahren am meisten erforscht wurden und die je nach Anbaugebiet unterschiedliche Sortenprofile aufweisen. Argentinien bietet mindestens drei Cabernet-Stile mit einer Besonderheit: Sie stammen alle aus kontinentalen Klimazonen, was in anderen Teilen der Welt sehr selten ist. 
Im Nordwesten erreicht er eine unglaubliche Farbintensität mit Aromen von Brombeeren und grünem Pfeffer, während er in Cuyo den als reife Johannisbeeren beschriebenen fruchtigen Charakter intensiviert. In den südlichsten Gebieten werden die mineralischen und erdigen Aromen verstärkt. Durch den Ausbau in Eichenholz oder in der Flasche erhält er einen eleganten, rauen Charakter mit Noten von Tabak, Leder und Gewürzen.
